Rocky Road Fudge Brownie

Brownie Batter
Tegral Cacao-Trace Clean Label Brownie Mix 1000g
Hot Water 230g
Oil 80g
Belcolade Dark Selection 55% 1500g
Sweetened Condensed Milk 1500g
Roasted and Chopped Pecans 500g
Mini Marshmallows 175g
Soft Butter 600g


Brownie Batter
  • Mix on low for 1 minute. Scrape and then mix 1 more minute on low.
  • Put in a half sheet pan. 
  • Bake at 350°F for 25-35 minutes  or until set.  
  • Cool and top with fudge

  • Melt the Belcolade Noir Chocolate to 115-125°F.
  • Add sweetened condensed milk,  then soft butter.
  • Add nuts and marshmallows. 
  • Spread  on the cooled brownies. 
  • Let set and cut.
