Chocolate Filled Chocolate Chip Muffin

Process
  • Mix the Tegral Satin CL Gold Crème Cake with the liquid whole eggs for 1 minute on low speed. 
  • Scrape the bowl and mix for 3 minutes on medium speed. 
  • Add the water and oil, then mix for 1 minute on low speed. 
  • Scrape the bowl and mix again for 3 minutes on low speed. 
  • Add the Chocolante 4M Dark Chips and mix for 1 minute on low speed.

Assembly
  • Follow a triple deposit method into the lightly greased or paper cup lined muffin pan of your choice. 
  • Deposit 2/3 of the total batter weight for 1 cavity into each cavity. 
  • Follow with a deposit of Cremfil Ultim Dark Belgian Chocolate. 
  • Deposit the remaining 1/3 batter. 
  • Top with Chocolante 4M Dark Chips and bake in a 350°F deck oven or a 340°F rack oven.
