Mocha Simple Syrup

Mix together the simple syrup and the 25g of Classic Mocha.

Tiramisu Cream

In a mixer with a whisk, mix the Paloma One Step Mousse, Cremyvit, cream cheese powder, the 50g of Classic Mocha and the milk on low speed for one minute. Scrape bowl and mix for 3 to 4 minutes on high speed.

Assembly

In a 7 inch ring, place a layer of Dulcerio Sponge Cake.
Soak the sponge with the Mocha Simple Syrup.
Add a layer of tiramisu cream followed by another layer of Dulcerio sponge.
Soak the sponge with more Mocha simple syrup and top with Tiramisu cream.
Level off the cream and then freeze.
Once frozen, dust with cocoa powder and Miroir.
