Tegral CL Wholegrain A/P Cookie 1000g
Soft Butter 350g
Liquid Whole Eggs 120g
Molasses 15g
Sliced Almonds- Toasted 75g
Dried Apricots- Diced 75g
Dried Cranberries 75g
Raisins 75g
Softgrain Amber Grain Clean Label 200g
Process
  • Mix the Tegral WG AP CL Cookie Mix with the soft butter, molasses, and liquid whole eggs for 1 minute on low. 
  • Check dough and if lumps of butter are still present mix for one more minute on low speed. 
  • Add the dried apricots, dried cranberries, raisins, toasted slivered almonds, and Sapore Softgrain and mix for one minute on low speed. 

Assembly
  • Scoop using a number 16 scoop (do not push cookie down). 
  • Bake cookies for 12-15 minutes in a 330°F rack or convection oven.
