Gateau Basque

  • Soften the butter, and mix with salt and sugar.
  • Add the sifted flour with baking powder. 
  • Add the eggs and the rum.
  • Keep refridgerated for 24 hours. 

  • Laminate the dough to 5mm.
  • In a greased tart ring, shape the bottom and pipe in Topfil Origins Michigan Cherries.
  • Apply another disc of dough on the top. 
  • Egg wash with Sunset Glaze and use a form for the design. 
  • Bake in a deck oven 180°C bottom 200°C top for 20-25 minutes, depending on size.
