Ready-to-use mirror glaze with neutral taste for bavarois and mousses. Delivers a perfect shine and mirror effect of superior and constant quality. For horizontal surfaces.

The art of patisserie decoration has been handed down from chefs to apprentices for generations. The Miroir range of glazes is an integral part of this heritage. Used by Master Patissiers in more than 70 countries, Miroir lets you quickly create an incredibly shiny and glossy finish on your mousse cakes. Available in neutral versions and several flavors, Miroir glazes can be mixed with different colors and textures (fruits, nuts…) to create unique applications and the precise tone of shine you desire (from super shiny to a more “satiné” style).

Ingredients

Water, sugar, glucose syrup, gelling agent (pectin (E440)), acid (citric acid (E330)), antioxidant (sodium METABISULPHITE (E223)).

Ready to use product, do not add water. Stir gently with a spatula until obtaining the desired texture and apply on the top of your bavarois or mousse. For an easier application, the mousse should be frozen before being finished. For a more sophisticated finishing, add Puratos Classics, colors, flavors, etc.
