Assembly

When dough is fully mixed, fold and let rest covered with plastic for 10min, or scale into 54oz pieces and round into a ball for divider/rounder.
Once rested, scale into 1.5oz pieces, round and place 7 pieces (as seen on picture) into an 8" aluminum pan.
Place in proofer.
Once fully proofed, spray with Sunset Glaze and pipe Deli Dulce De Leche on top as seen on picture or in a desired design.
Bake and serve.
