1. Once dough is fully mixed, fold or scale into 79.2oz pieces and round for divider/rounder.
  2. For topping, mix all ingredients together until a thick paste forms. A small amount of food coloring can be added if desired.
  3. Cover with plastic.
  4. Scale into 2.2oz pieces, round and place on bakings sheet pans pre coated with shortening.
  5. Using your hand, smear a little bit of shortening on the rolls.
  6. Let rest for 10-15min.
  7. Scale Concha topping into 0.8oz pieces.
  8. Using your hand, roll topping into a ball, flatten out in your hand and place on top of roll by patting with your hand until uniformly all around the roll.
  9. Cut with Concha cutter.
  10. Place in a rack and cover with plastic.
  11. Let floor proof.
  12. Once fully proofed, place in oven and bake.
