Lemon Bar

Flour 2000g
Icing Sugar 600g
Butter 1000g
Salt 40g
Eggs 300g
Yolks 120g
Deli Citron
Tegral Satin CL Crème Cake 1000g
Unsalted Butter (softened) 250g
Process for Crust
  • Mix all dry ingredients together with butter. 
  • Add the eggs and yolks, avoiding over-mixing. Store in the fridge or freezer.
  • Sheet to 4mm and cut to fit the desired pan. 

Process for Streusel
  • Mix the cake mix and butter together on low speed until smooth and homogeneous. 
  • Push through a screen and freeze until needed. 

  • Par bake the crust at 350°F for 10 minutes or until it has just started to brown. 
  • Pipe a layer of Deli Citron over the crust and top with streusel. 
  • Return to the 350°F oven for 20-30 minutes or until the streusel is golden brown.
  • Once cooled freeze and slice into desired size squares while frozen. .
