Topfil Origins Turnovers

  • Mix the butter and dry ingredients together to mealy consistency. 
  • Add the water and mix until just combined. 
  • Sheet out 10mm and allow to rest for at least 1 hour in the refridgerator. 

  • Laminate dough with 30% roll in fat following proper lamination procedure. 
  • Once laminated and rested, sheet to 4mm and shape into squares of desired size. 
  • Fill with Topfil Origins and fold over, then crimp. 
  • Allow to rest for at least 30 minutes. 
  • Spray with water and top with sanding sugar. Cut as desired with scissors. 
  • Bake in a 400°F rack oven with .3 liters of steam for 10-15 minutes depending on size of dough piece.
