Method

Instructions
  • Decorate a demi-sphere mold with a small black dot of colored cocoa butter. 
  • Sponge or stamp in the desired iris color of colored cocoa butter.
  • Pipe or draw fine lines of red colored cocoa butter. 
  • Or stamp in a thin layer of red in a tcats eye patter. 
  • Shell in tempered white chocolate. 
  • Allow to set overnight. 
  • Fill each mold ¼ with Vivafil Raspberry. 
  • Heat the heavy cream and pour over the chocolate. 
  • Bland to emulsify. 
  • Add the peanut butter powder and peanut butter. 
  • When filling reached 88°F portion in molds. 
  • Allow to set overnight. 
  • Back with tempered white chocolate and allow to crystalize fully.
