Dulce De Leche Mango Chocolate Mousse Layer Cake


Chocolate Cake Method
  • Combine cake mix and 1st water, mix low speed for 1 minute, then 2 minutes medium speed.
  • Add oil and water mix 1 minute low speed, scrape, mix 2 minutes medium speed.
  • Add water 1 minute low speed, scrape, 1 one minute low speed. 
  • Deposit to desired shape, bake 350°F.

Deli Dulce De Leche Method
  • Heat Dulce De Leche.
  • Add bloomed gelatine deposit.

Mango Cream Filling Method
  • Combine ingredients and whip on high speed for 5 minutes.

Chocolate Mousse Method
  • Combine wet and dry mix low speed 2 minutes scrape down, mix medium speed till desired volume.

Belcolade Cacao-Trace Blanc Selection Chantilly
  • Heat cream pour over chocolate emulsify. 
  • Let cool minimum 12 hours. 
  • Pipe as desired
