Softgrain Apple Pie


Pie Dough Method
  • In a mixer with a paddle attachment, combine the butter, sugar and salt and blend until smooth. Add the egg yolks and mix until blended. 
  • Add ½ of the flour, followed by the water, followed by the remaining flour. 
  • Mix until just combined. 
  • Refrigerate and then laminate to 3mm. 
  • Line a 20 cm pie tin with the bottom crust. 
  • Cut strips of the remaining crust to create the lattice top.

Softgrain Apple Pie Filling
  • Peel and slice the apples into very thin slices. 
  • Combine with remaining ingredients.

Assembly Method
  • Line a 2: perforated tart ring with the pie dough. 
  • Fill with the softgrain pie filling. 
  • Top with a lattice crust, spay with the Sunset Glaze and bake at 400°F for 25 minutes or until baked through.

Tips & Tricks: 

  • For creating a lattice with pie dough, it is best to do it first on a tray lined with parchment, this way you can transfer to the freezer if it gets too warm. 
  • Once set, transfer it to the top of the pie, crimp the edges, spray with Sunset Glaze and bake as directed.
