Roasted and Puffed Spicy Quinoa Lait Selection Bark

Working Method
  • Temper Belcolade Lait Selection Ct to 30-31C add cayenne pepper mix well, confirm temperature didn't drop below 30C 
  • Deposit into desired mold/shape/size 
  • Add Puffed Quinoa immediately, allow to crystalize at least 12 hours at 18C with humidity below 60%
  • Remove from mold and dip or enrobe with tempered Belcolade Noir Selection C501/j 
  • Allow to crystalize minimum 2 hours at 18C before consuming
