Mix the Tegral Satin CL Fine White Layer Cake with the first water on low for 1 minute then medium for 2 minutes.
Add the second water and Oil and mix on low for 1 minute, scrape and mix on medium for 2 minutes.
Add the last water and mix on low for 1 minute, scrape and mix on low for 2 minutes.
Bake in 8’ round pans at 365°F in the Reel and 350°F in the deck.
Once the cake is cooled cut the cake in half.
Coastal Berry Mousse Method
Soak gelatin in ice water for 20 minutes.
Melt gelatin and add it to the Topfil Coastal Berry Filling.
Lightly Whip the heavy cream. Fold in the heavy cream into the Coastal Berry Filling.
Coastal Berry Jelly Method
Soak the gelatin in ice water for 15 minutes.
Melt the bloomed gelatin.
Mix the gelatin into the Topfil Coastal Berry filling.
Assembly
Layers are as follows:
Finishing layer – Only Miroir Neutre (or 50/50 Topfil Coastal Berry and Miroir Neutre – spread a thin layer on top)
Top layer – Coastal Berry Mousse
Middle Layer - Cake
Second Layer – Coastal Berry Jelly
Bottom Layer – Cake
