Layer Cake Method
  • Mix the Tegral Satin CL Fine White Layer Cake with the first water on low for 1 minute then medium for 2 minutes. 
  • Add the second water and Oil and mix on low for 1 minute, scrape and mix on medium for 2 minutes. 
  • Add the last water and mix on low for 1 minute, scrape and mix on low for 2 minutes. 
  • Bake in 8’ round pans at 365°F in the Reel and 350°F in the deck. 
  • Once the cake is cooled cut the cake in half.

Coastal Berry Mousse Method
  • Soak gelatin in ice water for 20 minutes. 
  • Melt gelatin and add it to the Topfil Coastal Berry Filling. 
  • Lightly Whip the heavy cream. Fold in the heavy cream into the Coastal Berry Filling.

Coastal Berry Jelly Method
  • Soak the gelatin in ice water for 15 minutes. 
  • Melt the bloomed gelatin. 
  • Mix the gelatin into the Topfil Coastal Berry filling.

  • Layers are as follows: 
  • Finishing layer – Only Miroir Neutre (or 50/50 Topfil Coastal Berry and Miroir Neutre – spread a thin layer on top)
  • Top layer – Coastal Berry Mousse 
  • Middle Layer - Cake 
  • Second Layer – Coastal Berry Jelly 
  • Bottom Layer – Cake
