Classic Brownie


Brownie Method
  • Melt chocolate to 45°C.
  • Heat water to 50°C. 
  • Add hot water and oil to brownie mix. 
  • Mix on low for 1 minute. 
  • Scape bowl. Add melted chocolate mix. Mix for an additional minute on low speed. 
  • Deposit onto a half sheet tray with extension. 
  • Deposit walnuts evenly. 
  • Bake at 163°C for 28-30 minutes. 

Glaze Method
  • Mix both ingredients together avoiding air bubbles.

Assembly Method
  • Once brownie is cooled to ambient conditions, apply glaze. 
  • Freeze and portion to desired shape/size.
