Connect Harmony box to the spray machine. Set temperature to 194°F or 90°C. When temperature is reached, apply glaze with the nozzle in the vertical position at a distance of 3-5”. IT IS IMPORTANT TO FOLLOW MANUFACTURER’S RECOMMENDATIONS FOR SPRAY MACHINES.
Heat product to 194°F or 90°C and brush glaze onto bakery items such as; fresh fruit tarts, fruit flan, danish pastries, puff pastries, French and petit fours pastries, etc.
