In this demo, we will Explore a modern approach to seasonal tarts by creating a Jack-O-Lantern inspired Pumpkin Tart. This tart will feature the flavors of fresh pumpkin, combined with coconut, light citrus and toasted black sesame. This intriguing flavor combination is further enhanced by the familiarity of traditional pumpkin pie spice showcased as a surprise insert of a pumpkin and Amber Chocolate cremeux.
Peter Scarola started his baking career while in High School working at a local bread bakery. His passion for baking lead him to Johnson & Wales University to study Baking and Pastry Arts as well as Food Service Management, where he graduated in 1999. After spending years honing his craft in fine dining restaurants, hotels and bakeries, in 2018 Peter took on a role as Technical Advisor for Patisserie and Chocolate at Puratos.
