Raspberry Chocolate Cookie


  • Mix the butter, liquid whole eggs, cocoa powder, molasses, raspberry flavor and Tegral AP WG CL Cookie Base for 1 minute on low speed. 
  • Scrape the bowl. Mix for one more minute on low speed. 
  • Mix in the chocolate chips. 
  • Finally mix in the freeze dried raspberries just utill combined. 
  • Scoop with the blue handle scoop – 75g. 
  • Press into the cookie bar mold and bake. 
  • Bake in the deck oven at 350⁰F for 12-15 minutes.

Assembly Method
  • Pipe a thin layer of Vivafil Raspberry on top of the chilled cookie. 
  • Enrobe the chilled cookies with tempered Belcolade Noir Selection. 
  • Garnish as desired.
