Plant-Based Double Chocolate Cookie


  • Mix room temperature margarine 65-68°F with cake mix till paste forms (about 4-6 minutes).
  • Slowly add soy milk and vanilla.
  • Mix till dough forms 1-2 minutes.
  • In seperate mixer with paddle attachment break down chocolate for 5-8 minutes - or chop/crush to desired size.
  • Add chocolate and walnuts mix an additional 1-2 minutes.
  • Portion to desired size - for best results freeze, then bake frozen pucks.
  • Bake 350°F for 14-18 minutes, depending on size.
