Fillings and Toppings Method
Whip Ambiante at medium speed for about 4 minutes to a soft peak and set aside in a piping bag.
Blueberry Mousse Method
Whip Ambiante at medium speed for about 5 minutes. Incorporate Topfil Plus Blueberry by folding into whipped Ambiante, fill a piping bag with star pipping and set aside.
Blueberry Glaze Method
Heat Harmony with water to a boil.
Add Miroir and Wild Blueberry and blend.
Candied Blueberry Method
Whip aquafaba with whisk until frothy.
Toss blueberries then sugar to coat.
Assembly
Trim top of the 3 cake layers.
Place one layer of the cake on a cake board or serving plate and spread a thin layer of Blueberry Mousse.
Pipe a line around edge of cake with Whipped Ambiante and fill the center with Topfil Plus EZ Blueberry.
Top with a second cake layer and repeat finishing with the 3rd Cake layer.
Frost the cake with Whipped Ambiante.
Smooth and create texture if desired.
Trim top and bottom cake with Blueberry Mousse.
Poor and spread a thin layer of Blueberry Miroir Glaze.
