Lemon Madeleine


  • Sift the flour, baking powder and baking soda, set aside. 
  • Melt the butter and keep warm. Combine the remaining ingredients and mix until smooth, about 1 minute. 
  • Add the sifted flour mixture. 
  • Add the melted butter. 
  • Pipe into madeleine molds and refrigerate for about 90 minutes.
  • Bake in a 400°f oven for 9-11 minutes or until baked through.

  • For added flavor, brown butter can be used. 
  • If using the other Classics, like Orange, Strawberry or Coffee, you may omit the baking soda.
