Working Method
  • Mix Pan De Maiz base, oil and first stage eggs 1 minute on low 
  • Mix 3 minutes on medium 
  • Add second stage eggs and water while mixing 1 minute on low speed 
  • Scrape down bowl, mix 3 minutes on low speed 
  • Pour 2000g in half sheet pan with paper and pan extender 
  • Top with fresh corn from cob. Mix in just enough to coat corn with batter
