Caramel Apple Quatro Leche


  1. Dulcerio Syrup*
  2. Tegral CL Yellow Layer Cake
  3. Caramel Tres Leches Cream
  4. Topfil Origins Washington Apple**
  5. Deli Dulce de Leche Glaze ***

Cake Batter Method
  • Mix first water and mix on low speed for one minute and medium speed for two minutes. 
  • Add second water and oil, mix for one minute low speed scrape bowl then mix two minutes medium speed. 
  • Add remaining water and mix for one minute low speed, scrape, two minutes low speed.
  • Deposit 350 grams into 8 inch mold or 7mm cake sheeter. 
  • Bake at 350°F.

Caramel Tres Leches Cream Method
  • Mix Dulcerio syrup and finesse with whip 2 minutes medium speed. 
  • Add Deli Dulce de Leche mix an additional 3-4 minutes. 
  • Add 1/3 of the soft whipped Ambiante. Continue to mix. 
  • Once smooth fold the other 2/3 soft whipped Ambiante.

Glaze Method - Option 1
  • Whip Deli Dulce de Leche with a whip til loose and smooth. 
  • Mix together with Miroir til smooth, not incorporating air bubbles. 
  • Apply thin layer on top of cake.

Glaze Method - Option 2
  • Use for flat sheet cakes or dessert logs.
  • Heat Dulce de Leche till 35°C. 
  • Add bloomed/melted gelatin. 
  • Add Miroir heat to 36°C apply to frozen product.
