Tips & Tricks:

  1. Set aside 460g of dough from each piece to color and apply before final sheeting.
  2. Sheet to 3.5mm and cut into 10x10 cm squares,
  3. Place piece in muffin pan and proof.
  4. Once proofed dock center of dough and place one #70 scoof of Topfil Origins Washington Apple in each cup.
  5. After baking, allow to cool and then pipe a rosette using a #868 tip into the cup of Deli Caramel mousse.
  6. Dust with cinnamon and decorate with dried apple chip.
