Cacao-Trace Clean Label Brownie

Brownie Method
  • Add hot water and oil. 
  • Mix low speed 1-minute. Scrape.
  • Mix 1-minute low speed. 
  • Deposit. 
  • Add Dulce de Leche. 
  • Bake 350°F 18-22 minutes, depending size/shape.

Amber Chantilly Method
  • Heat cream to 180°F pour on top of the chocolate. 
  • Use an emulsion blender for a good emultion. 
  • Cool down to 4°C. 
  • Whip to soft/medium peak, pipe to desired shape.
