Brownie-Ganache & Praline Stuffed Cookie


Chocolate Chip Cookie Method
Mix everything together for 1 minute on low speed. Scrape the bowl. Mix for one more minute. Add the chocolate chips and mix untilcombined. Sheet to 6.5 and chill.

Brownie Method
Mix all together for 1 minute on low. Scrape the bowl. Mix on low forone more minute.

Assembly Method
Mix equal amounts of brownie batter and Belcolade Ganache together. Cut the cookie dough with an eight inch cake ring. Pipe 125g of praline on the cookie. Next pipe 170g of Brownie ganache mixture on top of thepraline. Finally place the second cookie dough on top. Be careful as you seal the side that the batter does not leak out. Bake at 350F for 20-25 minutes or until set.

Decoration Method
Lightly warm the Belcolade ganache. Spread it on top of the cooled cookie. Garnish with candy almonds and cocoa nibs.
