Blueberry Like Pie


Dacquoise Method
  • Whip the egg whites and the sugar to a firm peak. 
  • While the whites are whipping, combine the almond flour, confectioners sugar, flour and salt. 
  • Fold the almond mixture into the egg whites. 
  • Line an 8” ring with parchment paper and place on a tray lined with a Silpat. 
  • Pipe a spiral of the daquoise mixture and then pipe mounds around the perimeter to creat a tart like shell. 
  • Bake at 400°F for 18 minutes or until baked through.

Blueberry Cream Method
  • Whip cream to a soft peak, fold in Topfil Blueberry.

  • Brush the inside of the tart shell with melted Coverlux White. 
  • Pipe the blueberry cream on top. 
  • Freeze. 
  • Once frozen, top with 100g Topfil Blueberry. 
  • Freeze again. 
  • Top with Miroir Neutre and decorate with blueberries.
