Banana Cinnamon Ganache Method
  • Bring cream, inverted sugar, cinnamon, and puree to 356°F.
  • Pour over chocolate emulsify.
  • Add butter at 95°F then rum emulsify. Deposit at 82°F

Banana Jelly Method
  • Bring puree, sugar and coconut sugar to a boil. 
  • Add pectin mixed with sugar. 
  • Cook till 219°F Let cool to ambient.
