Amber Grain Chocolate Bites

Granola Method
  • Combine Softgrain Amber grain, granola, diced dried apricots, oats and coconut in a mixer with the paddle. 
  • Mix on low speed till just combined. Bring maple syrup, glucose and vanilla to a boil. 
  • Turn mixer on low speed while pouring liquid in slow steady stream into the mixer. 
  • Continue mixing until coated and combined. 
  • Add melted 115F Chocolante Plant Based Dark and Sea Salt. 
  • Mix till just combined.
  • Press firmly and evenly into desired molds. 
  • Bake for 15 minutes at 325° F in the deck oven. 
  • Cool at ambient temperature. 
  • Let set over night then enrobe in Chocolante Plant Based Dark.

Decoration Method
  • Using a frozen stamp, decorate each piece with the Cacao-Trace logo before the chocolate sets.
