Puratos Corporation Launches Three New Sourdough Products Based on Natural Fermentation Flavors

On October 10th and 11th, Puratos was planning to announce three new products at the Taste Beyond Imagination event in Napa, CA. 

Due to the wildfires in Napa County, this event was cancelled and some new products could not be introduced to our attending customers.

The following sourdough products were scheduled to be launched:

 

Sapore Adelia is a liquid, living wheat sourdough providing a creamy flavor profile with its origins in France. The French acquired this sourdough from the Greeks on their trading missions. Wheat sourdough is at the source of risen bread and can be used to produce many varieties of baked products like artisan-style breads. Sapore Adelia is therefore an excellent, base sourdough.

 

Sapore Oracolo is a liquid, living rye sourdough with its origins in France. According to the traditional French bread culture, grapes or bran were soaked in water, and then mixed with flour to start the ‘levain’ fermentation. The microorganisms naturally present on the grapes start the fermentation and promote the development of fruity flavors. Sapore Oracolo is based on this traditional fermentation.

 

Both Sapore Adelia and Sapore Oracolo are part of a new category of living sourdoughs. These living sourdoughs provide leavening, texture and flavor, similar to traditional sourdoughs. These living sourdoughs are ready-to-use for all bakers and bring convenience and consistency in bakeries making artisan-style products.

This enables customers to make flavorful multigrain breads with extended freshness and better flavor. Softgrain has been available since 2010 in the USA market and is the answer to the markets need for organic products. Softgrain Amber Grain Organic is the first of a series of Softgrain products that are organic certified. Softgrain Amber Grain Organic is a blend of oats, wheat, flax, sunflower and millet in a mild sourdough combined with the sweetness of brown sugar and molasses. It can be used in a variety of product like breads, rolls, baguettes, cookies and cakes.
