1. Combine all ingredients in spiral mixer and mix for 5 minutes at low speed followed by 8 minutes at higher speed until down is fully developed.

2. Allow dough to rest for 10 minutes.
3. Divide into 60g pieces and round.
4. Flatten slightly and place into greased hamburger bun pan.
5. Proof for 60-90 minutes at 100°F and 80% humidity.
6. Spray with Sunset Glaze for better color and top with sesame seeds (if desired).

7. Bake in deck oven at 420°F for 7-9 minutes.
8. De-pan immediately after removing from the oven.
