Production Technique

Cobbler Mix
  • Soften the butter in the microwave for 30 seconds. 
  • Place the soft butter in a mixer fasten with a paddle. 
  • Add the layer cake in the bowl, start mixing. 
  • Immediately add the eggs. 
  • Finish mixing until homogenous (30 seconds on first speed). 
  • Refrigerate 500 g of the cobbler mix, keep the rest at room temperature for assembly.

Assembly
  • Lay 250 g of the cobbler mix in in 4 X 7” cheesecake foil container. 
  • Scale 500 g of your choice of Topfil or Deli filling, on the cobbler mix in the foil container. 
  • Finally crumble 125 g of the cold cobbler mix on the top of the filling.

Baking
  • Bake in convection oven at 325°F for 40 minutes.
