How does the Puratos Sourdough Salt Reducer work?

A. In the baking process, salt acts as an activator for the Maillard reaction. Our product is fermented and dried in a specific way so that it brings in some defined amino acids. Therefore, it also acts as a booster to the Maillard reaction. On top of this, the acids produced during the sourdough fermentation also acts as taste enhancer.
