To recapture the traditional bread flavors, Puratos developed the Sapore range of ready-to-use flavors and sour doughs. The range includes all natural, fermented flavors which put the flavor back in without having to take the time for dough to ferment or requiring any additional skilled labor.

1. Do I have to adjust my water and yeast levels?
A: With liquid Sapore, the water level should be decreased proportionately (between 50-100) to the amount of water added. Conversely, the yeast should be increased by the same proportionate depending on the acidy of the liquid Sapore used in your recipe.
2. How stable are liquid Sapores?
A: Unopened or opened (but sealed), liquid Sapores are stable for 9 months at room temperature
3. Does liquid Sapore contain fermentation power?
No. Liquid Sapore has been pasteurized to eliminate microorganisms to ensure shelf-stability.
4. Is liquid Sapore a natural product?
Yes. Liquid Sapore is a bakery product based on natural fermentation. It does not contain emulsifiers or chemical additives.
5. For which type of applications should I use liquid Sapore?
Liquid Sapores can be used in any bakery or snack application. However, each Sapore can be used in specific applications.
6. Can liquid Sapore be used in sweet doughs.
Yes, for example Fidelio at 2% can be used for croissant dough to enhance the butter flavor.
7. Can liquid Sapore be used in frozen dough?
Yes. In the frozen process, liquid Sapore will compensate for the loss of flavor.
